Less land would be required to grow our food because raising animals and feeding them takes up so much land. Below are some plant-based dinner options suggested by Harvard Medical School that give a boost to your health as well as reduce your carbon footprint:
Tofu skewer kebabs with quinoa salad
Tofu can be a substitute for chicken on skewered kebabs, with vegetables such as peppers, tomatoes and red onion. Adding a quinoa salad raises the nutritional value of the meal.
Vegetable pasta
Whole-wheat pasta with cannellini beans and peas, with a salad of lettuce, cherry tomatoes, olive oil and balsamic vinegar.
Vegetarian chilli with orzo salad
Vegetarian chilli is made of kidney beans, black beans, green pepper, tomato sauce and rice. A healthy side is an orzo salad with cherry tomatoes, red onion, peppers and feta cheese.
